There are some strange food combinations that make perfect sense. Peanut butter and jelly. Tomato and basil. Cheese and crackers. Nobody questions them.

And then there are the weird combinations that make you stop, stare at the ingredients, and wonder who on earth decided to try that in the first place.

Peanut butter and pickles? Ice cream and olive oil? Pizza and honey?

Surprisingly, some of these culinary odd couples are really good.

The secret is that great food isn’t always about matching similar flavours. Sometimes the best combinations come from contrast: sweet and salty, creamy and crunchy, rich and acidic, or spicy and sweet.

1. Vanilla Ice Cream, Olive Oil and Flaky Salt

This one sounds like something you’d find on the menu of an extremely expensive restaurant where the waiter explains every ingredient for seven minutes. But it’s incredibly simple.

Take a scoop of good vanilla ice cream, drizzle over a little extra-virgin olive oil and finish with a pinch of flaky sea salt. Or you can incorporate the olive oil in your ice-cream making process like this recipe.

The olive oil adds richness and a silky texture, while the salt cuts through the sweetness and makes the vanilla taste even more intense. The result is creamy, sweet, salty and surprisingly sophisticated.

The important thing is moderation. You’re making ice cream with olive oil—not dressing a salad.

2. Peanut Butter and Pickles

 

This combination has been dividing people for years, and it’s easy to understand why. Peanut butter is rich, creamy and slightly sweet. Pickles are sharp, salty, sour and crunchy. On paper, they’re complete opposites.

This works particularly well with very crispy fries. For an extra kick, add a little chilli or hot sauce to the honey.

4. Strawberries and Balsamic Vinegar

 

This sounds less strange once you know that balsamic vinegar and strawberries are a classic combination.

The trick is that you’re not trying to make the strawberries taste like vinegar. A small drizzle of good balsamic vinegar actually enhances their natural sweetness and fruitiness.

Slice some ripe strawberries, add a tiny drizzle of balsamic and leave them for a few minutes. You can also add a little black pepper, which brings out even more flavour.

It’s a great reminder that an unusual ingredient doesn’t necessarily need to dominate a dish. Sometimes it just needs to make everything else taste better.

5. Grilled Cheese and Raspberry Jam

 

Grilled cheese sandwiches are already wonderfully indulgent: crispy bread, melted cheese and plenty of buttery richness.

Before you dismiss this one, give it a chance.

A drizzle of honey over pizza works particularly well when the pizza has salty, spicy or savoury toppings. Pepperoni, hot sausage, chilli and salty cheeses are all excellent candidates.

Honey brings sweetness to the party, balancing the heat and saltiness of the toppings.

Even better, try hot honey if you can find it. The combination of sweet, spicy, salty cheese and crispy crust is dangerously addictive.

This combination isn’t particularly unusual in many parts of the world, but if you’ve never tried it, it can feel like a revelation.

Sweet, juicy mango gets a hit of fresh lime juice, followed by chilli and perhaps a little salt.

Dark chocolate works particularly well, although milk chocolate is arguably the more dangerous choice because it’s ridiculously easy to keep eating.

9. Chocolate Covered Pickles

Think pickles and chocolate have no business being on the same plate? Think again. This surprisingly delicious combo brings together tangy, salty and sweet in one bite—we’re talking chocolate-covered pickles! With just three ingredients, this easy snack is worth trying if you’re a fan of both pickles and chocolate.

10. Peanut Butter and Sriracha

 

If you like spicy food, this one’s worth trying.

Peanut butter is creamy, rich and slightly sweet. Sriracha brings heat, acidity and garlic.

Spread peanut butter on toast and add a tiny drizzle of sriracha. You can also add sliced banana for a sweet-spicy combination that sounds questionable but works remarkably well.

Start cautiously with the hot sauce. You can add more; you cannot un-burn your mouth.

11. Dark Chocolate and Blue Cheese

This is the combination for people who have graduated from peanut butter and pickles.

Blue cheese is salty, creamy and intensely funky. Dark chocolate is bitter, sweet and rich.

Together, they’re surprisingly balanced, and they work even better as an ice-cream!

 

You’re looking for a contrast between the chocolate’s bitterness and sweetness and the cheese’s salty, savoury character.

There is actually a method behind the madness.

Many successful food combinations rely on contrast. Sweetness can soften heat. Acidity can cut through richness. Salt can make sweetness more pronounced. Crunch can make creamy foods more satisfying.

That’s why combinations that seem completely incompatible can suddenly make sense once you taste them.

Of course, not every strange combination is secretly brilliant. Sometimes peanut butter and mustard really is just peanut butter and mustard.
